Spinach and Feta Roll

I was looking for something very quick and easy (and reasonably healthy) so put together a spinach and feta roll. I know there are fancy versions available but mine was delicious nonetheless.

1/2 packet frozen spinach, defrosted with the water squeezed out
About 200 g feta, crumbled
Heavy pinch nutmeg
6 sheets filo pastry

Combine the first three ingredients until well distributed. Brush each sheet of filo with water (or melted butter if you want a richer product) and layer . Pour the spinach mix onto the filo so it forms a big sausage-shape in the centre of the filo with at least a 5 cm border all around. Fold in the short ends and then roll. Use water to seal the last edge to the body. Cook at 220 C until golden and flaky.

Serves 4 and is perfect hot or cold ;-)
